I would guess dextrose, maltodextrin, etc., to be ideal carb sources as carbs are all broken down anyway - unless there is a specific benefit in the digestion process.
It was mentioned that fat blunts insulin levels, would that be a greater concern, or would a stepped-up transport of fat to the cells (in a high insulin environment) be the bigger worry?
Popcorn has a (relatively) high fiber content, and during refeeds fats and fiber should be kept fairly low since the goal is to spike Insulin which has the effect of increasing Leptin levels (which is why dextrose, maltodextrin are ideal sources).
Using the Glycemic Index as our source of comparison, Glucose has a value of 100, while Popcorn has a value of about 55.
